Pita bread
Olive oil
Tomato or pasta sauce
Fresh Mozzarella cheese
Shredded Mozzarella cheese
Tomato, chopped
Garlic, 1 clove, minced
Broccoli
Preheat oven to 425 degrees. Boil broccoli in a large pot until al dente (still crunchy) and drain. You can pour cold water over the broccoli to stop the cooking if preferred.
Once the oven is warm, place pita bread on a sheet pan in the oven for about 1 minute to warm and soften it up (or microwave for 15 seconds). Once out of the oven, grease the top of the pita with olive oil on a napkin or paper towel. Spoon on tomato sauce, but remember to leave a border for the crust. Scatter thin slices of fresh mozzarella. Add as much broccoli, garlic and tomato as you'd like. Top with shredded mozzarella so that the broccoli gets melted in with the cheese and won't fall off the pizza easily.
Bake in the oven for 5-8 minutes or until the crust is as golden brown as you'd like. Cut into fours and eat!
Obviously, you can use whatever toppings you'd like, but pita bread makes a great and healthy crust. Just don't forget to add the olive oil so it will get crunchy. So good! Inspired by a July posting at twelve22.
